Choconut Balls

Ingredients for 10+ Balls

  • 3/4 cup almonds
  • 1/2 cup pecans
  • 3 tbs plain, clean protein powder (eg: Pea protein by Pulsing; Brown Rice protein by Sun Warrior; Collagen protein by Great Lakes or Bulletproof)
  • 3 tbs raw cocoa powder
  • 1 tsp ground cinnamon
  • 16 fresh dates, pitted
  • juice of 1 large orange
  • Desiccated coconut, to roll into

 

Soak the dates for 20 minutes in water. 

Mix all the dry ingredients (nuts, protein, cocoa, cinnamon) in a powerful blender until you get a crumbly mixture. Add the dates and juice until all blended together. Add a little of the soaking water and/or couple more dates if mixture doesn’t seem to bind or the mixture is too crumbly. A few pieces of dates will be easily combined into the mixture when shaping the balls so don’t worry if you cannot blend everything to a pulp. Fill up a small bowl with the desiccated coconut. Use an ice cream scoop or a large tablespoon to scoop some of the mixture out then use your hands to shape into a ball. Don’t worry if mixture is very sticky and/or you don’t end up with a perfect ball. Shaping is made easier once rolling the mixture into the coconut. Place on a plate and cover to keep into the fridge for a few days. Alternatively, you can freeze them and defrost as needed.
